Baked Potato Soup

Easy and can be ready as fast as you can boil potatoes!

Ingredients

  • Golden Potatoes
  • Heavy Whipping Cream
  • Sharp Cheddar Cheese
  • Parmesan Cheese
  • Bacon
  • Green Onion
  • Sour Cream
  • 1 Stick of Butter

Items Needed:

  • Pot (for boiling)
  • Cutting Board
  • Knife
  • Cheese grater

Step 1

Quarter the golden potatoes and boil. You can peel them first, but golden potato peel is soft and won’t make much of a texture difference. If you use russet potatoes, you may want to peel them as the skin of these is tougher. Red potatoes may also be used, and preferred is to peel as well.

Things to do while potatoes are boiling:

  • Put bacon in the oven to cook until crispy, or cook in a pan as you see fit. Cook the bacon as done as you’d like, but the crispier, the easier it will crumble.
  • Shred the cheddar cheese and parm cheese
  • Cut green onions

Once the potatoes are boiled to the point where they are starting to crumble, keep some of the water in the pot and strain the rest of the water out. You don’t need much water, just enough to help stir and further soften them to the proper texture.

Turn heat down to low-medium

Step 2

Season!

Add in salt, pepper, garlic, ranch dressing seasoning to taste.

Step 3

Add in whipping cream, butter, handful of cheddar cheese, handful of parm cheese, and stir. You can use a fork or a potato masher to help soften the potatoes. You will add as little or as much as you would like of each ingredient.

The more butter and whipping cream you add, the more liquid the soup texture will be. Add until it’s where you’d like. You can also add milk if you’re short on cream, but use sparingly as milk isn’t as thick as cream.

The more cheese you add, the thicker it will get. It will also thicken up a bit as it cools. If its not thickening up as you’d like, add more cheese, or continue to keep on low heat. While on low heat, stir as let excess water evaporate.

Step 4

Serve, and add toppings! Everyone in my family likes it a little different. I add bacon crumbles, shredded sharp cheddar, green onions and a bit of sour cream on top.

Serve with bread of your choice! Our go to is artesian or sourdough!
